
Christmas is getting so close now. Can you believe we're about 3 weeks away from the most anticipated holiday of the year, for kids and parent's alike. We're hanging up lights, decorating the tree, wrapping presents, and planning our Christmas menu. I bet you never imagined adding Kikkoman to your holiday shopping list?
You can create a beautiful soy-brined turkey for the holidays that will impress your guests, as well as yummy snacks, appetizers, and side dishes you never thought would be in your Christmas feast. You can also make transform your leftovers in a variety of tasy dishes such as Turkey Tetrazzini, Turkey Fried Rice, and a quick Chinese Turkey Salad.
I was recently sent a variety of Kikkoman products to prepare our Thanksgiving Dinner with. After having a small holiday meal with my family, and a large dinner with my husband's, we decided to go ahead and go all out over the Thanksgiving weekend. I was also provided recipes to help me along the way. If you are cooking turkey at Christmas this year, I invite you to try the following recipes. Since I've been preparing the holiday meals for the past few years, I like to be creative and un-traditional. Every year it seems I find a new recipe for our turkey or ham, and they always turn out wonderfully. This year is no different.
10 ounces Kikkoman naturally brewed soy sauce
1/2 cup kosher salt
1/2 cup sugar
2 tablespoons dried sage
2 tablespoons dried celery seed
1 tablespoon dried thyme
The night before roasting, remove giblets and turkey neck. Rinse turkey inside and out. In a large stockpot or 5 gallon bucket, mix water with remaining ingredients. Stir until all the salt is dissolved. Place turkey in pot, cover with a lid and refrigerate overnight, or at least 8 hours. Remove turkey from brine and rinse well. Now, follow your regular cooking instructions.

Now, what to do with the leftovers? Most years, I honestly do nothing with our leftovers. They go to waste, or my hubby picks at them until it's gone. Kikkoman also has a few great recipes for all the leftover turkey you have sittin' in the fridge.
3 green onions, chopped
1 cup diced turkey meat
1 carrot, cut into julienne strips
1 egg, slightly beaten
2 cups cold cooked rice
2 tablespoons Kikkoman soy sauce
Heat oil in a large skillet. Add next 3 ingredients; stir-fry until carrots are tender, yet crisp. Add egg; cook, stirring gently until cooked. Mix in rice and soy sauce. Cook until rice is thoroughly heated.

1 pound sliced mushrooms
6 tablespoons butter or margarine
6 tablespoons flour
1 cup chicken broth
2 cups Kikkoman Pearl Original Soymilk
1lb. spaghetti noodles
1 cup parmesan cheese
salt and pepper to taste
Cut turkey into bite-sized pieces. Melt the butter in saucepan. Then, stir in flour; cooking until it starts to bubble. Gradually add chicken broth, stirring until sauce thickens, then add soymilk, salt and pepper, and cheese. Add turkey and mushrooms and slowly simmer. Meanwhile, cook pasta according to package instructions. Drain and stir into the turkey mixture. Pour into a non-stick baking dish. Bake at 450 degrees until heated thoroughly and the cheese has melted.
These are the recipes we've tried over the holiday weekend. We will be cooking turkey at Christmas, and I'll be trying other leftover recipe ideas as well and share them with you.
